We do not grow our vineyards this way only because it doesn't pollute the soil with toxic chemicals, but we also believe this is the best way to allow true terroir expression without synthetic additives. It provides a more authentic expression of the individuality of origin.
We found this place in the foothill of the Andes Mountains, the "El Escorial" estate: a deep, rocky alluvial terrace beside an old creek. Here we grow ungrafted vineyards from massal selections. We get low-yield harvests of concentrated grapes. The place is free from mildew or other fungus diseases. We don't treat our vineyards with anything other than water.
In Biodynamics, we treat the vineyard as an individual organism and respect the natural rhythms of nature. We seek the growth and diversification of biology and organize our various agricultural tasks following the lunar calendar and the movements of the cosmos in their relationship with the soil's biological processes.
We avoid synthetic fertilizers, so compost is critical for adding nutrients to the vineyards. We use animal manure and plant matter from the estate to produce rich compost that brings microbes to make the soil healthier.
We pick very early in the morning when temperatures are low, then select the best berries by hand to ensure quality. Our tanks are gravity-fed. We like to treat our fruit gently and in a delicate way.
Biodynamics stands for authenticity. We want to bring you unique wines from minimal intervention winemaking so you can taste the natural flavors and get the pure character of this terroir. Our wines ferment by the action of indigenous yeast. We do not add any yeast or anything else that could modify the taste. A tiny amount of sulfites guarantees that our wines get to your glass the right way, wherever you are.
